Without the deburr toolpath I would just draw my own fillet/chamfer and use flowline with a direction "lead in/lead out" 😀

      Absolutely! Thanks for sharing.
Especially when done using lollipop mills. If using a Dove Mill that could produce suboptimal results.

Does this type of tool path work with models that already have the chamfer on the model? How does the geometry selection work in that case?

The Multiaxis Deburr toolpath that comes as part of a Multiaxis Mastercam license has a feature called "include unsharp edges" which will work on models that are already chamfered. It would be up to the programmer to use Mastercam's Model Prep tools to remove model fillets and chamfers, creating a sharp edge to select with Mastercam Deburr.

How about if you want a single pass to break the edge of a 3D-feature, not necessarily an undercut; but sometimes the customer will add a chamfer to the model. How would I go about this?

It would be up to the programmer to use Mastercam's Model Prep tools to remove model fillets and chamfers, creating a sharp edge to select with Mastercam Deburr. You can also use the "include unsharp edges" inside the Multiaxis Deburr tool if you don't want to edit the model.
