Pineapple Coconut Dessert || Tropical Flavour 🍍🥥🌞🌴❤

This dessert is fluffy, creamy and full of tropical flavour! If you're a pineapple & coconut lover, this is perfect for you.
Ingredients:
Pineapple pastry cream:
200 ml canned pineapple juice
300 ml coconut milk (or whole milk)
5 egg yolks
60 g sugar
40 g cornstarch
Vanilla extract (optional)
8-9 canned pineapple rings, cut into small pieces (* please watch the video)
Coconut cake:
5 egg whites
1 pinch of salt
80 g sugar
80 g desiccated coconut
1 teaspoon vanilla extract
1 tablespoon fresh lemon zest
Whipped cream:
500 ml cold whipping cream
2 tablespoons sugar
1 teaspoon vanilla extract
Decoration:
3-4 pineapple rings
Desiccated coconut
