Pepper Jelly Ribs: All Q’ued Up Vs. Kosmos Q

- Today we are cooking Pepper Jelly St. Louis Ribs. Here is what you will need for this recipe.
1) Ribs
2) Pepper Jelly
3) Your favorite rub (All Q’ued Up or Kosmos Q)
4) a sweet BBQ sauce (we used Killer Hogs)
5) Brown Sugar
6) Honey
7) Butter
Start by taking the membrane off the back of the ribs, and season them with your rub of choice. Get your smoker going at 275. Put the ribs on, unwrapped until the bark is set. Once the bark sets and you have achieved the color you are looking for, wrap it in honey, butter, brown sugar, and a little bit of sauce.
Check the ribs after 45 minutes of being in the wrap, and every 20-30 minutes after that until they probe tender.
Once they are done, make some foil boats, unwrap your ribs, and put them back on the smoker to glaze. The glaze should be made to your liking, but we did about 50/50 bbq sauce and pepper jelly.
Once you are done, and the glaze is tacky, you are ready to eat!

I gotta say, when you think about how short the eat time is versus the prep and cook time, you guys are rocking it.
