Ikura is known as red caviar, coming from salmon. Caviar is any cured fish roe (eggs), though many elitists will say that only caviar that comes from the sturgeon family of fish is caviar which are black eggs, so Ikura wouldn't traditionally be classified as caviar. The expensive caviar that everyone thinks of is known as beluga caviar which comes from the beluga sturgeon. Black sturgeon caviar is said to have the best texture and flavor, but the sturgeon population is so low its hard to mass produce, which is what makes black caviar expensive.
I bought caviar once. At least to my family, no one liked it, including me. I'm not sure if it was fresh, but it had a bit of a bitter taste, that reminded me of stale fish. In the end it became cat food... At least the cat seemed to like it.
You can get a small can of cheaper caviar for around 50 usd, which is not that unthinkable. Or it might not have been actual sturgeon roe caviar, but rather another type of black roe "caviar", which is way cheaper but still a very tasty treat.
A lot of fancy stuff from the sea is normal stuff for those living by the sea. Some price are taken from the preservation and delivery for that ingredients.
