i lovd the reaction of mama olga when she tried the lechon kawali, i think to make it crispier cook it in low fire for an hour so it will not overcooked, and we are happy for your trip here in the philippines
Lechon kawali is best hang for 1 or 2 days for air drying or refrigerate for 2 days for fermentation before frying. My Swedish daughter in law and family really enjoyed when I made them.

The technique of lechon kawali is to boil it first. Add salt chopped garlic, black pepper, laurel leaves, and chopped onions. Once the meat is tender. Have it dry for 1 hour and put a lot of cooking oil in a pot. Once the cooking is hot and boiling you can put the pork meat. Fry the meat until crispy. Once it is crispy you can slice the pork belly and place it on a platter. Serve it hot with Mang Tomas pork liver sauce.
Get it Toasted a bit more Nanay until the skin gets dark brown and blistering . The skin of that would become elastic if dried or left until the following day, but I know though that it's yummy. Enjoy and nice eating.

When you cook lechon kawali you have to boil it first till it becomes tender. Then you have to prepare the pot with plenty of oil and make it hot that's th time you put the pork.
sir andrie... to have lechon kawali crispy skin... after 5 mins of cooling (air cooling) the newly fried pork belly, refry it or scoop the hot oil and pour it on the pork skin... also, reheat your sauce and add corn starch slurry to thicken it...
Great work! The oil needs to be very very hot. Heat the oil until you see white smoke and then put the meat in. If the oil is this hot, you only need to fry for 50 seconds to a minute. There should be enough oil to submerge the meat entirely.
Kawali means frying pan, the other kind of lechon is the one cooked outdoor wd long bamboo and the whole pig is put in the bamboo and roasted for 5 hrs.
