    As an Irish-Man, and big into the abiding to the Traditions of my Country.....The Coddle you made Looks Fab, and id imagine tastes as good as it Looks, the Guinness is a Nice Finish. However.... id leave out the Garlic, Traditional Irish Mammy's, wouldn't use Garlic.
    The Coddle dates back to the Irish famine, where anything to hand got thrown into the pot, Garlic would have been a luxury the poor didn't have, when making the Coddle, Its also may have also come from one-pot cooking employed by the sailors of Ringsend (Dublin) and was a favorite of both Jonathan Swift, and Seán O'Casey, as well as mentioned
    in the works of none other than James Joyce.
    Aside from that it did look Good.
    9/10 ....... Minus 1 for the Garlic.

      @@MannysMadeatHome Carrots are Grand, then again in the Coddle would vary in how its Cooked, depending what part of Dublin, Saying that, maybe the Garlic is a 21st Century addition, though the traditional one is what ive had, and ive seen carrots and Leeks in it too, was known as a Poor Mans meal back in the day....Had a peek at your make on Guinness pie/stew.... Epic !! Good Sstufff

      Lol I am a bit half and half, I do like discovering new things, but when I am in front of the camera I prefer to be familiar with what I am cooking lol, but it is nice to experiment every once in a while! 😊

    A friend from Dublin sent me her recipe after I saw photos she had posted on Facebook of her version. Not too diifferent from yours. Cheap Irish sausages. Carrots. She said she doesn't bother skimming off froth and fat. My attempt turned out with a lot of liquid remaining but she says that's how she makes it too, more like a soup.

      There are a million variations! In its essence it really is just throw everything in the pot until it turns to mush lol, I prefer a bit of different textures in my meals 😊

    Coddle is: Potatoes, Onion, Rashers, Sausages and parsley, ..slow cooked in a stock (chicken or veg) with some ground pepper for seasoning. That's it. Nothing more! Nothing browned in the pan first. No garlic. No carrots. That's not a coddle anymore when you add those. That's a sausage stew. Coddle is very specifically the few ingredients that I listed, boiled up and simmered in a stock. Simple and lovely..

      Thanks for the comment! You are most likely correct and whereas I love the purity of a recipe like that, many families have, very naturally, made the recipe their own and added little tweaks here or there, this is what I have followed, this is in essence the recipe of born and bred Dublin families, to which I did add some extra things like the garlic and the browning step. Food and culture evolves over time (not always for the better 😅), you will find many Irish cookbooks include garlic, carrots and other bits actually. I have also seen some that cook it in the oven, in layers in an attempt to make it more cheffy, that's probably a bit of a stretch lol but who is to know exactly what the very first coddle actually contained 🤷🏽‍♂️

      @@MannysMadeatHome Yes, theres a balance to strike with your own chefs knowledge (head) and keeping to tradition (heart)
      When coddle was first "invented" it probably would have contained garlic if it was available. I doubt many poor Dubs and Irish traditionally had access to garlic. Meals were usually made with whatever was a available at the time.
      I rarely cook anything without garlic. It's a staple of cooking now.
      Anyway, good video 👍

      Carrots can be put in but theirs no need for stock...but what makes it not a coddle is the frying of the meat and sausages ...its changing it from a coddle a white stew...to a brown stew and changes the flavour and texture

    Looks good, but agree with the previous comment - lose the garlic. ( I love garlic, but it doesn't belong in a Dublin coddle )

      Look I'm not against it...but I think one should know how to do the original first and show that way first before taking liberty's lol theirs too many youtube videos pretending this new fangled "coddle" Well is the Dublin coddle and its not...traditional coddle is very tasty and warms the cockles its just subtle and too some unappealing looking because of the boiled sausages but it's an historical and heritage dish...I first encountered it in Hong Kong kinda well a varient way back when in 2012 and I was like wtf and no but I ate it lol

      In my video I mentioned every step that would be considered non traditional or was my own addition so it was never declared as the true original recipe (whatever that turns out to be as no one can seem to agree) but I personally cannot face the thought of pale sausages floating in my stew, they don’t call it “mickey soup” for nothing lol

    I have read that coddle has been around since the 1700s not as this guy says the 2nd world war. No garlic or carrots in a Dublin Coddle.

      There is a debate going on in the comments ha! Seems like garlic is a no go (though I consider garlic a flavor enhancer, you shouldn't really taste it in the final product and if you do, you've probably overdone it) Carrots seems to be optional. Like many dishes it evolves over time and families will put their own little spin on it. Do I know what the OG recipe is, no... Does anyone?

      Ha ha the debate continues! I've seen so many different recipes with and without, maybe with carrots isn't the original (but who knows) but I have to say, I did enjoy the pop of colour they bring and that bit of sweetness 🙈

      I have learned that every family has a very different version of coddle. The frying of ingredients first was my own addition, I couldn't bear the thought of pale meats in my coddle 😊
