if you're wondering what happened around 1:20 and why this isn't working for you, it's because he switched over to 'texture paint' mode from the drop-down menu where object, edit and sculpt mode usually are in the upper left of the main viewport.

So all the gums on one side should be one face? Doesn’t that cause problems with the dimensions, since the vertices aren’t aligned with each other along any one axis?

Did you get it from gumroad? I just checked and Texture file is there it's called Textures.zip and it's 9mb in size. it's on top of the video, you might have missed it.
