    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RUclips channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RUclips videos, her cookbook, and cooking classes.       @@tikbrum6256pad thai is thai, nam khao is lao. nam khao originates from a village in laos called thadeua. Google is free.

      My opinion is the same. I do quite a lot of cooking, but you are outstanding in the way you communicate and showing us on all your videos. I have learned a lot from watching you. Not only new ways how to cook, I learned the lessons why I do it plus your technique is a lot better than my skills being a “self thought” home cook. :o)

    Pailin! You are a godsend! Ive been watching you channel for only probably the last year or so and using your advice on some ways to find authentic thai restaurants. Anyway the other night I found this really good place and got Yum Naem Khao Tod but I got a whole bunch of other things too and wasnt able to finish it. After some unsuccessful googling about how to heat it up I remembered your channel, found your recipe for this dish, and then of course you had some advice for heating it back up. Thank you for all your hard work even 4 years ago! 🙏🙏

    I love this dish! My mom calls this nam khao. She showed me how to make these and she usually makes the rice into pucks and then shallow fry them in oil.

    This was AMAZING! We had it at a Thai/Lao restaurant and had to recreate it. My husband, who is Chinese, was skeptical because it isn't traditional fried rice. This is so much better, in my opinion. I can't wait to try the green curry rice balls!

    I know this is an older video but I had to watch it again. My mom calls it Nam Khao. Instead of a batter we dip the rice balls in egg whites and only use the yolk in the ball recipe. The toppings you use make this look so tasty!

      I used to be able to order this dish from a Thai restaurant in Hollywood, CA called Ganda. They called it 'naem sot kao tot'. Sadly the restaurant was sold and the food is not as good as it used to be.

    Isn't this a Lao food? I know there are a lot of Lao living in Thailand and a lot of them are street vendors. Just curious because when you make Filipino dish you say it's their food and this is a Lao dish correct? Thank you. Btw I love watching you because you seem so awesome and I wanted to see if I can change my ingredients around sometimes... but mainly cause you seem to have a great personality like my best friend and she kinda looks like you lol. We are both half Thai too 😊

    Hi Pailin, thank you for this recipe! I had never seen this dish in Thailand, but I've just come back from a trip to Luang Prabang in Laos, and had it at several restaurants - same name and dish there, I think. It was awesome! Now I want to try it at home. Just one question, I have lots of Asian supermarkets available here, so hope to be able to find the sour pork/sausage. But, are you sure there is no need to cook it? I thought I remembered it being cooked (and cooled) in the dishes I just had, but not sure. Thanks again, *great* videos!

      kangarool You don't need to cook it, but some people cook it anyway if they're not sure how clean it is when it was made. So if it makes you feel better, you can cook it, but you will notice a lot of the fat melting away (which might be a good thing if you're calorie conscious!)

    thanks Pailin, i love this dish but one of the very few places in sydney that sold it closed down. i'm not sure they used coconut in theirs, i made this a couple of times myself and it worked well but will try your recipe. thank you x

      There is a naem, a vegan sausage made with fermented mushrooms. Or you can try to use any mushrooms, or use vegan sausage. Also you can substitute egg replacer for egg. Perhaps jackfruit has the texture of meat you can substitute...

    I have this dish around 7 years ago at my Thai friend house at thanksgiving . I absolutely love it, I asked the recipe from her but never had a chance to make it.     I am craving just the coconut rice balls part, so this is perfect! Thank you for posting! when I ask my mom for recipes she's always like "Oh just put this, put that, done" leaving out 90% of the ingredients and steps 😂

    I discovered this on the streets of Thailand when I lived there. I want to say that this is perhaps my favorite Thai dish but so many Thai dishes are great. The perfect combination of flavors in your mouth. They serve it with different leaves and basil. Kop kun ka!

    Hi Pai. This is one of my favorite dishes and I can't wait to make it, I didn't know coconut is in it. I'm not a big fan of shredded coconut, can I not put that or replace it with something else? Or is it a must? If so, I can do with it. Thank you, love your videos and recipes.

    Love your recipe and demonstration. Just a little point that you may be unaware of is that a sphere has the minimum surface area to volume and therefore would absorb the least oil. Best Regards.

    You will probably not find this dish at Thai restaurants however, if the restaurant serves Laotian dishes or Isaan style dishes they might have it. I live in the LA area and every Thai restaurants I've been to do NOT have this dish. Kind of like "som tum pla la." The only restaurant I've found in LA that makes the papaya salad in that style specializes in Isaan dishes. If you go out a little farther out to Long Beach or Garden Grove, there are some Laotian restaurants that make it. They simply call it "naem khao" instead. If you are in California, you can find it at some restaurants in the Bay Area, mainly East Bay.

      CoralPink Gwiyomi it's a lao influence but still Thai-Isaan style. You cant say that all Asian noodles is chinese, can you? bcause it's all chinese influence

      โถๆๆๆ ไอ้พวกลาวมาทวงนั่นทวงนี่อีกแล้ว ไอ้ส้นตีน อะไรก็มาจากบ้านมึงหมดเนอะไอ้พวกควายยยยย อาหารบ้านมึงนั่นแหละจำไปจากประเทศกูตั้งเท่าไหร่ ภาษามึงก็ดูแต่ละครไทย ทีวีไทย ฟังเพลงไทย คำหลายคำมึงก็เนียนใช้กลายเป็นภาษาลาวไปเลย พอถึงเวลาบอกเห้ยมึงพูดภาษาไทยกันอยู่นะไอ้พวกลาว มึงก็เสือกบอกเป็นภาษาบ้านมึงอีกหน้าด้านมาก ทั้งวัฒนธรรม ภาษา ทุกๆอย่าง มึงเติบโตมากับไทย มึงยอมรับกันเถอะไอ้พวกลาว มึงเอาไปตั้งกี่อย่างกูไม่เห็นคนไทยเค้าออกมาทวงอะไรปัญญาอ่อนแบบพวกมึงอย่างนี้เลย ....มา ลองมาสับเปลี่ยนกันมั้ย อะไรที่มึงคิดว่าเป็นของลาวเอากลับไปเลย ไปจดทะเบียน แต่ถ้าอันไหนเป็นของไทย ไทยก็ยึดกลับมานะ แม้แต่ภาษาก็ไม่ให้ใช้เอามะ กูว่าถ้าเป็นอย่างนั้นหมดทั้งประเทศมึงก็ไม่มีอะไรเหลือเลยที่เป็นของลาวแท้ๆเชื่อกูมะ ขนาดในประเทศลาวของมึง ณ ตอนนี้คนไทยไปเที่ยวไอ้เหี้ยยยย เจอแต่อาหารเวียดนาม เฝออย่างนี้ เนื้อหมาย่างอีก ....ทำมาเป็นทวงเห็นแล้วทุเรศทุรังลูกตาชิบหาย ประเทศมึงถึงไม่ไปไหนไง วันๆแม่งมาอะไรกับไทยมากมายก็ไม่รู้ ทำตัวเป็นกาฝาก ช่วยเหลือก็ช่วยทุกด้าน ....ทำไมคนลาวชอบทำตัวปญอ.ไม่เข้าใจ

      Kitchen Issan people are of Lao descent. Not many people know that. A long time ago they moved or lived in Thailand before the French revolution. Long story short lol. It's a Lao dish. 😊

    Can the rice balls be frozen, prior to frying? Would like to make a big batch of rice balls and then make individual salad servings layer. I love this dish.

      Yes they can. And you can fry them directly from frozen, although I wouldn't make them too big if you're going to freeze them so they will cook faster.

    The first time I tried this was in Hawaii, a Thai lady there makes excellent naem. My wife and I have been eating it for years, until one day I told her that the pork was raw and fermented. Ever since then, she's been wary of big bits of pork. Nevertheless, I told her it's all in her mind because taste buds win in the end!

    Just made a Vegan version, thanks ^_^ I am a British woman living in Chiang Mai and missed this dish from BKK - I'm sooooo glad it came out just as amazing as in Central World :) I substituted the egg with an egg replacer and got Naem jay from my local jay restaurant (difficult for those outside of Thailand) it's made from fermented mushrooms so I guess it'd be easy to make. I also always have it with ใบซะพรู (don't know English name but it is soooo good with this!!!) and another leaf that is long, thin and very tasty too but I don't know the name.

      Thank you. It's good to know that a vegan version is possible since I'm a vegan too. Don't think I man get my hands on the naem jay but I think I can probably substitute a vegan "sausage" or just leave it out. Maybe I can just add some oyster mushrooms or something that has a meaty texture.

    Bob's Red Mill sells unsweetened shredded coconut. Big Lots is a good place to find it on the cheap.

    Where do you find your naem in Vancouver BC?! Would love to have a go to place. Ive just marinated ground pork in lime juice to simulate but its not the same

    i use to make my rice ball right away once i mix it but one day i left it over night i found out the rice became more sticky n it was easier to make into a ball n easier to fry

      Hello! I have been making Nam khao several times and the past few times I made it I have been having such a hard time frying it. I’m not sure if you have the same problem. But when I’m frying the balls my oil would start foaming and then the foam would overflow causing a big mess and one time fire. We love to eat nam khao so much but seems like a problem every time. Do you have any suggestions? I am using new vegetable oil btw. I don’t follow this exact recipe but I put ground pork into it and I roll it into a ball. I also use 1 day old jasmine rice. Sometimes I freeze it and last time I fried it right away. Has anyone had problems with their oil foaming? Also, the oil I’m using is new so it’s not bad oil.

      I think if you use egg yolk and not the egg white when you prep the rice so when you fry in the oil it will not foam you fry.

      Just regular rice, sticky rice would be too heavy for this.

      Lek C. You can use normal ham, but if you don’t prefer meat - you dont need to include it (it may not taste the same)

    Thank you for explaining why we don’t get sick from eating raw som moo / sour fermented sausage. I grew up eating it raw but stopped why I was old enough to realize you get sick from raw meat especially pork and chicken. Anyways, I feel much better now that I know the scientific reason why it’s safe.

      Dude, go to school and learn more about food from all around the world before coming here and demanding people do things according to what you think is a fact! This dish may be inspired by Laos, but this is not a Laos dish. Don’t be ridiculous! I’m pretty sure Laos has a similar kind of dish. This is a Thai dish (probably originated in Northern Thailand if I’m not wrong)
      P.S. Since Cambodia, Thailand, Vietnam and Laos are neighbors to each other. Their dishes are quite similar, because they are all inspired by one another.
