FAST AND EASY FAMILY DINNER - start to finish in 15 minutes | WHO GOT THE GAME BALL?

- Join us today on the farm and in the farm Kitchen as Vicky whips up a fast and easy family dinner we all love! This one pot past dish has become a favorite and it so easy and so fast to put together. Learn about the Game ball - who got it? What's that all about! and of course...chore time on the farm!
One-Pot Cheesy Italian Pasta And Chicken
Cheesy chicken pasta is a rich and savory dish bursting with your favorite flavors! Make this Italian chicken recipe for an easy dinner.
INGREDIENTS
8 ounces baby spinach leaves, divided
1 cup sun-dried tomatoes packed in oil and Italian herbs, drained (about 7 ounces)
1 large yellow onion, sliced
1 pound uncooked boneless, skinless chicken breasts (cut into 1/2" bite size pieces)
6 garlic cloves, sliced
1 pound dry linguine
2 teaspoons dried Italian seasoning
2 teaspoons kosher salt
1 teaspoon fresh ground pepper
1 teaspoon crushed red pepper flakes
4 cups (32 ounces) reduced sodium chicken stock
1 cup (8 ounces) chardonnay wine (or 1/2 cup lemon juice and 1/2 cup water)
4 ounces fresh Parmesan cheese, shredded
INSTRUCTIONS
Combine 1/2 of the spinach with the tomatoes, onion, chicken, garlic, linguine, Italian seasoning, salt, pepper and crushed red pepper in a 5-quart Dutch oven over medium-high heat. Pour chicken stock and wine over top. Cover and bring to a boil.
Cook 7-9 minutes until pasta is al dente (with a bite to it). Toss pasta with tongs occasionally to keep the pasta from sticking to the bottom of the pot. You will still have some liquid in the pan when the pasta is done cooking. This is going to make the base for our delicious cheese sauce.
Turn off the heat and add the cheese to the pasta. Toss pasta with tongs until the cheese melts into the pasta. Toss in remaining spinach.
Serve and enjoy!

Vicky, I made this chicken pasta dish tonight. I was amazing! Love the way the pasta absorbs the seasoning, broth and lemon and water. I used fresh cherry tomatoes instead of sun dried (I forgot to buy them) added with spinach at the end. So, so good this is a keeper!!!!

Looks great! I'm not sure if my family will eat the spinach (I know I will!) Chicken and Pork is about the only thing that is reasonable price and easy to find here in Indiana currently. I'm tired of both so this will be something new to try! I'm not sure about across the country but hamburger is $5.99 a pound here in Indianapolis.
holy smokes. hamburger is not that expensive here. wow! My kids don't like spinach but they eat it just fine in this.

It totally just depends on how much training they have had before and how much training and improvement we put into them. Blake has been so busy with football as soon as it’s done we’re hoping to get him in more videos in back on the Farm more

We used to have Nubians growing up in Phx. My mom would make cheese. I haven't made it by myself yet. I am just getting back into goats and bought some registered Lamanchas and Nigerian Dwarfs. We are trying to get the older ones bred right now so we can milk and make cheese next year. Our bucks are young *B Nigerians so its been challenging getting the big Lamanchas bred lol! I've been watching the HammockHavenFarm channel. She has a lot of good cheese videos and raises Lamanchas. You might like that channel as well:)

I make one similar...will it has been a while. Try replacing the spinach with chopped broccoli. The sauce you add is a small 6 oz can of tomato sauce. At the end you add the white sauce (Alfredo). Pretty yummy and delish...well for me.

Ha ha! I put parmigiano cheese in my dogs dinner...Italian Greyhounds. ..
I'll bet that it tastes very good BUT there are just too many calories for me as I am trying to stay on a reduced calorie diet for pre diabetes.
Use most of your ingredients but I would cut the pasta down by half or less and use a vegie based pasta high in fiber and taste but lower in calories, use lots of fresh cherry tomatoes instead of sun dried (just for Alan), drizzle extra virgin olive oil on as substitute for sun dried maranade, add tablespoon or two of Italian herbs (or fresh herbs), use mozzerella instead of parmesean, serve with a fresh salad and thin sliced sourdough bagette bread. Adding all the spinach at the end keeps the vitamins that are in this veg.
Still a very "quick and tasty" meal but lower in calories! Thanks for all your ideas!
