Don’t do this, formed meat using glue needs to be cooked fully and not to rare or medium rare. This is because not like a normal steak, the bacteria is fully throughout the meat and not just on the outside. For this reason it is illegal for stores to sell formed meat without telling you first.

@@craigarmstrong7564 you do realize that all ground beef was a slab of beef like he had in the video at one point or another, right? if he cooked the beef as a steak before grinding it down, i wouldn't have said anything because there's a difference in the way beef slabs and ground beef cook. when you cook a slab, you are able to order it rarer because even though there is a pink centre, the meat is still cooked all the way through. when you have ground beef, you have to cook it well done because any meat that still has a pink or red colour hasn't been cooked at all no matter how warm it may be. if you eat ground patties medium or mid-rare, just keep in mind that half the meat you are eating is still considered raw.

The reason why steak can be raw without any risks in the inside is because there’s no bacteria getting to it. when cooking the steak you will cook the outer layer with heat which kills all the bad bacteria. If you grind it then there will be some of the outer layer not properly cooked thus the bad bacteria doesn’t die concluding that it’s not really safe and definitely not recommended.

its really only a concern if you dont grind your own. if you dont trust or cant verify the grind of the meat, then dont trust it and go for medium at minimum. if you are doing it yourself, you're probably fine.
