    That barley salad looks so good, and it's not the kind of thing I would have expected to like. I love the idea of the sweet and savory together.

    I make a version of the barley salad, but it's more like a tabouleh with either barley or quinoa, which I prefer to couscous.

    Cherry tomatoes topping looks great but I hate fish if it's not one of the shellfish so I'll try it on shrimp instead.

      Isn't barley salad eaten in Egypt? It appears in cookbooks as Egyptian. Not this one necessarily, but barley salads in general

      Juan Sierra I’m not sure about other recipes of barley salad, but what I’m sure of that pomegranate, pomegranate molasses and feta cheese are definitely not a part of the egyptian cuisine.
      I’m pretty sure this is not from the west and south coast of Mediterranean, might be greek or turkish as they both use similar ingredients.

      Watch the prep and the grilling scenes. The fish is on the skewers untill it's done, when it is removed for placement on the tapanade.

    It's kind of misleading to talk about the "dietary fiber" of barley, then recommend "pearled barley" that has the pericarp removed, which is where the dietary fiber is. Only whole barley is high in dietary fiber!

    I have never been to Mediteranea. The American cheeses do not add dollars to the cheese. Sometimes snobbishness is added to European cheeses along with cost.

    Sadly, Swordfish absorbs more mercury waste than any other fish that swims the seas.

      Who cares? I don't want to sustain it. I just want to eat it. Also people who claim thay various things are not sustainable are usually a very poor source of info, no offense.

      Swordfish has excellent documentation when it comes to both its lack of sustainability and its tendency to harbor unsafe levels of mercury. It’s a large, slow growing fish and stocks were significantly depleted when it became very popular in the 90s. If you want to be able to eat swordfish in the future, you very much want to think about its sustainability now.
