Dalma recipe is one of the favorites of ‘Jagannath Ji’. Which he is usually being offered along with ‘Ghee Arna/Ghee Rice/ Ghee Bhaat’. You may have already seen a recipe called ‘Dalma’ on my channel. But this Oriya style Dalma is different from that because it is made with special ingredients and vegetables. We can’t use all the vegetables which are being used to cook a day to day Oriya dalma. This authentic Oriya dalma recipe is very unique as it is served as one of the odia dishes in Chappan bhog. Let start how to make dalma in Odisha.
Ingredients for oriya dalma/badia dalma

1. Yellow Pigeon Peas/Tur Dal/Arhar Dal: 1 Cup
2. Spine Gourd/ Kankada: 100 gm (Sliced)
3. Yam/: 150 gm (Sliced into Cubes)
4. Pointed Gourd/Parwal: 100gm(Sliced)
5. Raw Banana/Kacha Kela: 1 no’s (Sliced)
6. Grated Coconut/Nariyal Bura: ½ Cup
7. Tumeric/Haldi: 1 teaspoon
8. Ginger/Adhrakh: 1-2 inch (Crushed)
9. Asafoetida/Hing; mib 1 teaspoon
10. Jaggery/ Gud; 1-2 tablespoon
11. Cumin Seed/Jeera: 1 tablespoon
12. Clarified Butter/Ghee: 1-2 tablespoon
13. Salt/Namaak: As Per Taste
