Actually many tribes did have their own saddles often made out of bone, wood, and antlers. Most tribes didn't ride their horses often as we would to day, really most tribes only rode for war, hunting and sometimes travel (most had their horses as draft for travel). These horses that'd be ridden bareback and in native type saddles lived a long healthy life because of their nomadic lifestyle and how the Natives cared for their horses.
Really leather saddles weren't that popular with many tribes but of course when trade and colonization happened leather saddles were being used by many tribes.
That goes with bridles aswell as most just rode in warbridles but as time went on bits started to be used.
