Nice recipe, tried it, and had it, just little salty, I felt. If you eat less salty, then I advise you to reduce the salt quantity.

Sugar make crispy mathiya and if you use gud it will be make it soft,you can use both 50 -50 gud and sugar

Yes u can add jaggery but u boil it in water or milk and knead the dough very tight definitely it won't go chewy . U can get it crispy.
