A potential solution to dealing with overproduction or crops that don't sell is to ferment what you don't sell at the market, and sell it separately as a value-added product. German market gardener Olaf Schnelle does this very successfully, and I think it's a brilliant idea, because you don't have to let anything go to waste.

Great to see you back on the tube!! And how cool to hear that you quit the dayjob to go all in the gardens. By the looks of you and your beds, you're having a blast!
If you're really going for it, maybe it might work if you find some restaurants (if possible) nearby and see if you can work out some deals to grow a certain type of product for them. So you have some certainty of revenue and you wont be left with a bunch of unsold products like the radishes or cabbages.
Otherwise, very glad so see you back here, doing so well and expanding the business! Compliments from across the globe in wintery Holland
