I am not able to understand your statement, that if the system tends to minimise its energy, how can the capacitance increase? The energy stored in a capacitor is given by 1/2*C*(V^2), so if you want to decrease the energy, capacitance has to decrease(assuming constant V), because they share a direct proportionality relationship.
