Yesterday I made the crepes, it was a success because I followed your steps. And patience is everything.. And best part it did not burn, still crisp.

I’m from mien tay, and I used the rice paper wrap too. I think is that most of us Vietnamese Americans are sucks a wrapped with just lettuce, the rice paper help bring everything together nice and neat 😂. Thanks for the great tips on how to make banh xe crispy.
Oh so that why my wife and in-laws used rice paper when eating banh Xeo. I just eat it with lettuce and stuff but when my wife first made me a banh Xeo and then handed it to me with rice paper, I thought it was a little weird.

Very common to eat it my way if you live in central Vietnam. I thought eating it w just lettuce was different! 😅 but no, how you mix your batter doesn’t matter. I’ve mixed mine w beer, coconut milk, water and it all comes out crispy as long as you do it the technique I do. It’s all in the pan, heat and oil. I will post my recipe w batter soon! ❤️

Do you use a nonstick pan? And do you wipe the pan out after each one?
