That's a beautifully simple sauce that is great on its own or a starting point. I love making my own sauces and they're usually just thrown together as I taste it along the way, I'll try yours as a reset!
We don't have different styles here. Its just barbecue sauce. I was quite pleased with the last lot I made. I did add smoked paprika which gave it a nice flavour as I use it on non smoked meat and also added treacle which added another dimension to it.
Never been a big ketchup based BBQ sauce person, but our mustard base is friggin amazing! I'm actually making a sweet &tangy this year for Christmas gifts!😋
If you want smoked flavor, then make your own ketchup instead of store bought. Put your tomatoes on a smoker until charred. Peel them, and there is your smoked flavor. Add your smoked paprika. Natural smoke. I've never liked liquid smoke for anything..
Every time I’ve tried to make BBQ sauce it seems to have an overpowering vinegar flavor even when adding the right amount that the recipe asked for. Any reason why?
Vinegar is one of the sharper flavors that tends to mellow out after the sauce simmers for a little bit and then rests overnight in the fridge. If you taste your sauce right after mixing, it will be way strong. You can always add a little more sugar to barnacle it out.

I make a Dr pepper barbecue sauce. I reduce it down in the smoker so it's naturally smoked.
The white sauce is definitely not Alabama, we don't use it down here in the southeast part of the state. It's more of a North Alabama thing
