    1 teaspoon soy sauce
    2 tablespoons chopped spring onion greens
    For the Momo Chutney (Optional):
    1 cup chopped tomatoes
    1/2 cup chopped green chilies
    1/2 inch ginger, chopped
    1 tablespoon coriander leaves, chopped
    1 tablespoon vinegar
    1/2 teaspoon salt
    1/4 teaspoon black pepper powder
    Water (as required)
    Instructions:
    1. Prepare the Dough:
    In a bowl, combine flour and salt. Add oil and mix well.
    Gradually add warm water, kneading to form a soft, pliable dough. (Don't make it too soft!)
    Cover the dough with a damp cloth and let it rest for 30 minutes.
    2. Make the Vegetable Stuffing:
    Heat oil in a pan. Add ginger, garlic, and onion. Sauté until fragrant.
    Add cabbage, carrots, capsicum, and mushrooms (if using). Stir-fry for 5 minutes.
    Season with salt, pepper, and soy sauce. Cook for another 2-3 minutes.
    Stir in chopped spring onion greens. Transfer to a bowl and let it cool.
    3. Shape the Momos:
    Divide the dough into small balls. Roll each ball into a thin circle using a rolling pin.
    Place a spoonful of stuffing in the center of each circle.
    Pinch and fold the dough to form pleats, enclosing the filling. Secure the top with a tight twist.
    4. Steam the Momos:
    Place momos in a steamer basket lined with parchment paper.
    Steam for 10-12 minutes over boiling water.
    Alternatively, pan-fry steamed momos in a little oil for a crispy bottom.
    5. Make the Momo Chutney (Optional):
    Blend tomatoes, green chilies, ginger, coriander leaves, vinegar, salt, and pepper with water to a smooth consistency.
    6. Serve and Enjoy!
    Serve hot momos with the prepared chutney or your favorite dipping sauce.
    Tips:
    Use warm water for kneading the dough to make it softer and easier to work with.
