Every year in Sichuan, we make bacon by pork.
The pork is marinated in salt and then smoked with sticks.
Such smoked pork can not only be stored for a long time but also has a unique flavor.
It has been passed down from generation to generation, and it has become a special delicacy.
In this Chinese Spring Festival, I made bacon, sausages, and cured ribs...

這樣煙熏過的豬肉，不僅能夠儲藏很久，而且風味獨特

I have lived in the countryside in the last 2 years, I decided to run back to the city a few weeks back, I don't completely regret my decision because it lead me to the realization of how blessed I was to be able to life simply on a farm. 🌈
I say this to say that Your videos really helped in me in my most vulnerable state ,in my state of indecisiveness I didn't know where or what to do. Your videos were a constant reminder of what I am missing out on, you helped see the value in simple rural living🌱

So much effort goes into preparation of food. The people are so knowledgeable. The women are so capable and clever. They obviously learn survival techniques from from an early age. Then it becomes like second nature to them. I am extremely impressed at how these lovely people work. There is no room for laziness and everyone contributes in some form or other. I am very impressed with the family and team effort. As a teacher I show my students these videos, and they are astounded at how everyone contributes to the family chores and how they work together. No time for laziness or complaints. Greetings from a Polish Australian.
I'm from Northeast India, Rongmei Community. It's nice to see how you prepare the sausage. It's a little different from us, we usually use the liver, heart, basically the inner parts of the animal and some blood but not the fats or the meat. We chop them into tiny pieces and put it in the intestine.

the two most common is pork and duck liver, always with a bit of pork fat for the simple reason lean dried meat is hard.
i don't understand the language but by watching how she goes about her chores she is doing a big favour for her son answering his curiosities,, also your way of preservation.. Cheerio from PNG.

I married a traditional Chinese wife 20yrs ago and we go to visit China from Australia many times (well before the Covad19) and in our travels we visited many restaurants all around China from unbelievable big city restaurants little country places where the food was local & amazing if mysterious. It was food I had never tasted before. I made a rule, eat first then ask later was it was I had eaten. I found I had eaten foods unheard of in the west but it was great.
