It's called convergence and pretty much everyone does it to varying degrees. Often it's a very small change, like the way certain letters sound or using specific words and subconsciously. Sometimes it's more noticeable. I could be wrong, but it's probably related to subconsciously copying movements and expression from people you like. If I remember correctly, people who are more open for new experiences/people or who are more empathic do it faster/to a bigger degree

Absolutely. I'm white but grew up in a black/hispanic/arabic neighborhood in Detroit, half my family is mixed and I get along with all walks of life. I don't dramatically change my personality or the way I talk necessarily but there are definitely different ways of communicating depending on who you're talking to. It just makes social interactions a lot easier if you know how to talk to people on their level lol

Fun fact, This is also known as codeswitching, where you change the way you talk as a defensive measure so you don’t seem like an outsider to a group of people. For example you would use slang with your friends but not with your parents or anyone in a formal setting or something.
If it's acting to fit in that's a defensive measure, but it can also just be a positive social skill to share different sides of your real personality based on other people's real personality. I had so much trouble with communication as I learned so many accents by myself from watching films ,cartoons and music that I can communicate with each one of em.
