fantastic, so I presume you mix and buttercream properley first, then add the colours and only part or slightly mix as you say not to blendit it in fully, have I got that right?
@Traybuff Yes, I make my butter cream as per the recipe and color it a medium blue. Then add some white and dripping in blue food coloring straight from the bottle to give me variations of color.

This butter cream is a Swiss meringue butter cream using butter. I use a white food coloring by Americolor to whiten my butter cream before I use it. No more yellow. 😊
I just learned this myself through another baker…if you want very white icing but its yellowish because of the butter, add the tiniest dot of purple food coloring! It will whiten your buttercream and you don’t have to use a ton of white food coloring! Add 1 or 2 tiny toothpick-top sized dots of purple at a time until it’s whiter. It works amazingly!!

What makes it stable or sticky? This look sticky and this is good for this effect

I don't put salt in my butter cream. It's not sticky, just stiff icing. 😍
Could I do this with Whipped Cream icing?
You could use this technique with whipped icing but the colors would not be as vivid.
You could use stabilized whipped cream icing but the colors tend to be more pastel with whipped cream.
