Hi Cutty, You inspire me SO much, I love you! I make salads with fresh mint, with quinoa, colorful peppers, tomatoes and spices. I also make mint tea with black tea, or herbal tea, in boiling water and putting a bouquet of mint after I stopped the heat, put a top, wait a few minutes, and drink that.... also I keep the rest in the fridge in summer and drink on a warm afternoon. This is a great resource! For the mint, I like to include it in frozen banana ice cream. I have a chocolate mint plant in a little pot. It is so delicious and will survive anything.

There was an Ethiopian restaurant in my city that closed a few years ago and I have missed that bread so much since they closed and I didn't know what it was called. Really excited to try making some myself. I'm sure mine won't be as amazing as the owners wife's recipe, but practice might get me there.

Hi Jenne', you can make mint tea with your fresh mint.. it's lovely. Just put a few leaves in a mug and pour hot water and let them sit for a few minutes :)

Unsweetened west soy milk is my favorite too! Trader Joe’s unsweetened soy milk is great as well. I love that I can just keep it on the shelf until I need it. And it’s not sickly sweet like a lot of soy milks tend to be. :)
You don't really have to soak your beans. In fact, canned beans are not soaked before canning. I cook a 1 lbs bag and freeze the beans in 1-2 serving packets.

You can make different types of fresh mint tea's: strawberry mint, ginger mint just to name a few. Oh side note you should try the cacao nips, such a great topping for all those vegan desserts you make.
omg when u pulled out all the tahinis, then the HUGE maple syrup jug and the bouquet of mint :)))))) i swear your my twin sister/soul sister!!!!! love it!!!! :))))) btw chop up the mint superfine(1 tbsp), add 1/2 tbsps tahini,bit of carob molasses 1/2 tbsps, squeeze of lime juice, touch of seasalt and blend!!, now slather this creamy concoction onto your favourite slice of vegan bread!(or mini appetizer/salad)!!!!! bonappetit(afiyet olsun in Turkish)

Why do you freeze your compost? I would love to see a video on how you dispose of fruit and veggie waste. I've had a hard time keeping the fruit flies away and some people I share a kitchen with aren't so fond of my the smell of my food scraps.
Hannah Banana freezing it is what will keep the bugs and smell away from your apartment! When you've accumulated enough, you can take it all to a community compost. There are a lot of grocery stores that do that and there's a farm about 45 minutes from me that accepts food scraps for compost so you might be able to find something like that

The mynt is great in a pea soup, blend it and add a little cumin to it some salt pepper to taste and serve cold or hot. it is also great in Vietnamese pho, soup make broth with mushrooms instead of meat use rice noodles and top with fresh herbs like basil mynt, and lemon basil also beansprouts and nori so good, and some chili sauce.

I have dozens of spices and herbs too. Totally essential. My kitchen looks like rice, canned beans, frozen vegetables, potatoes, canned coconut milk, and coconut milk for cereals, salsa, avocados, corn tortilla chips, nuts, flax, chocolate soymilk, citrus fruits for juicing, and boxes of tea. Oh and peanut butter and jam.

And im also now addicted😩. LOL.. Ok so I want to try to make some of your recipes but I am trying not to eat oil of any kind. I heard its not to healthy...but anyway can I leave out the oil and the recipes still come out good?? Is there any suggestions?
Thanks so much!! Sure, you can leave out oil and do a water sauté. A bit trickier when roasting veggies, but you can also do them in veg broth, or just steam or sauté.

U can use the mints in spring rolls. As a vietnamese, we use in in spring rolls and bun soup or bun xao a lot.
