템퍼링한 후에는 온도를 계속 유지해주셔야해요!
보통 따뜻한 물에 올리거나 히팅건을 이용해서 온도를 유지시키고, 초콜릿의 온도가 너무 낮아져서 굳었을 경우에는 템퍼링을 다시 해주시면 됩니다 ㅎㅎ

화이트초콜릿과 인절미가루를 섞을때도 인절미 가루가 충분히 들어가줘야 인절미맛 초콜릿이 되거든요!☺️

초콜릿 온도는 초콜릿마다 템퍼링 온도가 다른데
화이트초콜릿은 보통
40~45도로 녹여서 25~26도로 내려주고 다시 28~29도까지 올려줘야 템퍼링이 됩니다!
