I picked up Real Sports Boxing for cheap back in 1988 for our family Atari 7800. It wasn’t ‘Punch Out’ but I really liked this one; solid 2P gameplay. I still have the cart but was disappointed to hear it won’t work on the 2600+ which just arrived this week.
For me the decades of nostalgia are hard for the other two to overcome, Activision Boxing is my personal winner. This is helped along by the fact that after 1998 it is hard for me to look at it and not think of it as two Geodudes duking it out. If I had a kid, that is definitely what I would have told him or her was going on. RealSports Boxing sounds like it has decent mechanics given the limited controller. But the few times I tried it after picking it up quite a few years back I could not get into it. Fight Night was one of my later 7800 acquisitions and I just haven't spent enough time with it to have formed a solid opinion but the little bit of time I have was not very enjoyable. I think your conclusion is probably fair if I were to remove the nostalgia goggles. But, if it wasn't for them, I probably wouldn't have watched the video. Very well presented review.
I was only familiar with Activision Boxing. Even as a kid, it didn't quite grab me. It was just too abstract, and I couldn't relate at all. RS Boxing looks real good, surprisingly good. Fight Night seem to have gone the cartoony look and feel route a la Punch Out, but with none of the charm and game play. Great roundup! I am a little surprised though by the lack of boxing games. I just thought there would have been more.
I didn't dig really deep into the libraries but those were the only ones I could find immediately. I was really surprised by real sports boxing too it was pretty good!
Activision's Boxing is #1 for me. Simple yet very addictive game play.

They're pretty solid for simple boxing games!
