When I build the game I still see the map hasn't completely filled my screen. There are some blue background space around the map. How do I stretch the background image to fit all screen sizes?

use the resizer tool in scene window
What about UI? I want my player to appear in front of a UI element, but the UI appears in front, and sorting layers don't seem to help here.

It looks like you ripped off the sprites from an amiga alien breed game and added over them.
Alien Breed is a classic! We got these sprite from a free asset on itch - tokka.itch.io/top-down-basic-set
