Ted' blackboard analogy brought back a searing memory from my childhood (70 years ago), The teacher had a blackboard that was just plywood painted matt back. He was drawing with chalk and drew a line downwards very fast. One of his nails caught in a narrow split in the wood and ripped his nail off so that it was flapping at the end of his finger. I have never forgotten the combined, teeth-aching screech of chalk on the board and his howl as he lost the nail.
    Thanks Ted . . .
    Now back to the video.

The canopy glue was for gluing clear acetate canopies onto RC planes as it doesn't fog the canopy like CA glue will. Great Hobbies in Canada is the distributor. I would also look at Bohle UV adhesives, primarily used to bond glass, teeth, etc. UV also dries clear. Tge other zap product is Zap 'o' which is a foam glue but has various uses and won't fog acetate. The other glue is old school which is, Uhu Por. I admire your patience, I would have gone with the router.

Video may not convey the tediousness of the process, but that sound certainly does. I've been doing precision work with wood, plastics & more difficult materials for five decades & it is remarkable how much I am guided by even the most microscopically subtle variations in sound that hand & power tools make. It stands to reason I guess, peering intently at the work with your face just inches away making judgements fractions of millimetres apart that could mean expensive mistakes or simple accomplishment, you hear much more than you realise.
The tense sound of an overheating drillbit, the hiss of an Olfa blade slicing off the end of a finger (its a very quiet, very distinctive sound - & we all know it), the tiny sound of an unwanted splinter being born filling a silent room.
My ears can tell me a tool is getting blunt before my eyes or hands can - whether it's a scalpel in my own hand or a 3ph planer two houses away.
Every tiny bit of that binding getting removed was pulling moments out of my 1960s,1990s, a bit of last year, half a dozen different workshops & that job I did in Prague.
    Powerful sounds.

Let me start by saying great call on the tortoise binding! I LOVE tortoise binding and pickguards on guitars. You also made a good choice on the tortoise pattern. Some are too dark, almost brown and others look more like an animal print blouse you aunt Marg might wear to the riverboat casino for a lady’s night of slots and frozen drinks.
You’re also super patient when it came to chopping off that old white puddyish binding. I kept trying to think of a guarded roller router bit I could possibly find or fabricate to use in my Dremel to speed it along. No doubt it would have gone terribly wrong, creating a bigger mess than I started with.
All in all another expert job that I’m sure the owner will be thrilled with. Thanks for sharing it.

The video clearly showed what a grind that job was. What got my attention was the difference in the binding material from one inch to the next. That doesn't allow you to get in a groove.

Canopy Glue is mostly a vinyl acetate ethylene copolymer, also known as EVA, famous as a foam (it's what Crocs and yoga blocks are made of), though obviously not foamed in this case. It's also used for hot melt glue, and a number of other adhesive applications.

Regarding the binding removal, I have a device that fits the end of my Dremel, purchased 30 years ago from Stew-Mac, that guides on the edge of the guitar and allows me to use a carbide router bit in the Dremel to cut binding channels and remove binding.
IDK if it’s still available, and I don’t intend a criticism of your method, I would be disinclined to use it on an instrument that old, especially with the paint.
I mention it because it has been a useful tool, especially for changing the depth of a binding channel to match available binding.
I retired from luthiery, other than what I need to maintain my collection. I mow lawns now.
    So much easier!
