The sadness,agony,regret keep haunting him even after he was no longer an archon. So to ease the pain,he drinks.A lot.Just my 2 cents.

Considering in the manga he hates remembering Celestia its a possibility, but I just think he does it as a middle finger to celestia (because its considered a foolish human passtime) but he eventually started loving it. The theory is alright tho.

About the Dawn Winery, since the food buffs us instead of doing the opposite, the maid may as well be trolling, instead I think it has something to do with the 2 dudes in the manga who tried doing bad things, the other one died while the other one left early
I think venti drinks in the first place is because he was mourning his friend- at first he might actually be affected by the influence of it and saw his friend and started doing it to see his friend, the more he drank the more tolerance he got plus him being an archon. Now he just drink a lot to either try to be drunk or it became a habit that sooths him -
I doubt Amber's grandpda actually has Alzheimer's. The last message sounds like a throwaway comment in the venue of "I can't believe you remember that!".
There are many people in the game with it, as well as arthritis. I dont find it too far off, especially considering that his actions are VERRRY in line with someone with alzheimers

I have a theory about Amber's grandfather. What if he doesn't have alzheimer's but instead lost his vision. In inazuma we see that memory loss is something that can happen when someone's vision is taken away so it's possible that his vision was stolen so he can't remember a big chunk of his life. Now I know that even the cases in inazuma weren't this severe however depending on what his ambitious were I think it's possible. Alternatively he might have started to experience alzheimer's like symptoms because of loosing his vision, kinda like how Domon looked like he wes experiencing schizophrenia like symptoms but after Yae and his friend talked some sense into him the symptoms went away which is why I think that if we see amber's grandfather in the future probably in her story quests(if she gets any) well either calm him down/do whatever to get rid of the symptoms or outright get his vision back.
Oh and about Diluc's maid I don't think she's an actual cannibal but she probably gave us the bad meat to creep us out and stop the traveler from asking questions

@@KlemenTime Klee did shape some but it wasnt intentional, in the strongest fighter quest he says she leveled a mountain and that she changed the landscape with her bombs lmao. Imagining her being so happy doing that is super cute, funny, and scary lmaooo
500 years ago was khaenri'ah 's destruction and the cataclyms that happened on the 7 nations, the archon war was 2000 years ago, which is around the time venti became the anemo archon,decarabian wasn't ruling mondstatd by that time,cuz he was dead obviously
