In Snake examples, when 2nd sentence talk about snake again why don't use "the"?

No. It is not correct. We can not say so.
it's a blue car
it's a blue snake
"the" - demonstrative pronoun and "it" - demonstrative pronoun
You can't use two demonstrative pronoun in your sentence
but you can say
That's a blue car
That's a blue snake
the same
This is a blue car
This is a blue snake
