Well, not quite right, but seriously close! I'm from Antelope, and Jimboy's is the PREMIER fast taco spot in the area, our "go to" spot for tacos. I'll need to tweak it a little to get it solid (I think I needed to put in less cheese, and up the lettuce level), but the addition of Achiote powder is genius! Real close! Living a thousand miles away, with no reason or desire to return, Jimboy's is the only thing I miss...well, maybe Togo's. Well done, and thanks!!
Those look good. Reminds me of the old Jack in the Box tacos from back in the 60s and 70s. Only difference is their were deep fried. They started selling back in the 50s when they opened a store in San Diego according to their history.
Got researching Jimboys and found out they opened up a place in Fort Worth Texas which is only about 25 minutes from my house. Going to have to make a road trip one day. They are getting rave reviews.

Loree's is a tradition whenever I go up to see my sister. A couple tacos for around 5 bucks and Firebox Beans! It's a cool little dive bar with some characters (regulars and employees!).

I watched the second post twice, there was a ton lost in the first post. I wanted to see how to get the crisp to the tortilla, thanks for reposting it's in the re-upload, missing from the original.
I added the measurements on the screen itself, but the spices in the meat were 1 teaspoon each of cumin, ground California chili, ground New Mexico chili, paprika, and achiaote. I also added 1 tbs dehydrated onion and 1 tsp dehydrated garlic.

I love Jimboys. I'm from Northern California and I grew up eating their food. They were supposed to close down, but I'm glad they changed their minds.
I just discovered they now have a couple locations in the Dallas area.

They were my favorite taco when you could get the shredded beef, they discontinued that about 4 years ago along with the Chili Relleno from the menu🙁
