As far as I'm aware, having higher DPI gives less input lag with diminishing returns. Above 1000 DPI there's really no meaningful difference. Since the DPI is effectively the shutter speed for your mouse sensor, the more images it captures per second means less input lag and more accurate information.
You're confusing DPI with polling rate. DPI is how many counts the mouse gives for an inch of movement. Polling rate is how often the mouse sends its counts to the PC.
