No, always use a probe at grill level, as the lid vents can show a difference of up to 50c (122f) @stuffandthat7, I've cooked using this method 1,000's of times and now know where to set my vents for my conditions to have the temp I'm chasing. In my older videos I do show my setting up using a temp probe. I should maybe bring it back into my videos or at the very least explain how I measure my temps, cheers for asking the question
I did my first brisket few weeks back and damn I can't wait until I do more. I didn't use temp probes just winged it on personal preference and smoked it with almond wood and the seasoning was salt, ground pepper, mustard powder, garlic powder and onion powder with some paprika powder.
I finally figured it out... the problem has my been, my beer timer ran for the video and NOT the cook!!! 🍺🍻🥴 (Cheers, Schuey!!! Wycked SNAKE my MAN) Daz how iz DONE! 💪😎🔥

I popped my smoked brisket cherry using this recipe. It was also my first time using the Weber summit built in smoking box. So I had to adapt some of his instructions (but I didn't forget to give the brisket a consensual pat)
Seriously I've been looking at the brisket emotional support animal in my supermarket . Gonna definitely pick one up and after a good consensual rub get it in my WSM 👍
I've got to say Schuey I'm starting to feel the pain of your grill grate , not to the point of tears or anything soft like that , but stainless steel has feelings too mate
