    Ingredients
    400 gm boneless chicken breast
    1/2 cup thick or hung curd (yogurt)
    1/2 tsp black pepper powder
    2 tablespoon ginger-garlic paste
    2 tbsp fresh coriander leaves (finely chopped)
    1/2 lime zest (optional)
    1 tbsp lime juice
    2 tbsp fresh cream
    1/2 tsp Salt
    8-10 cashew nuts
    8-10 almonds
    Instructions:
    Step 1
    In a bowl, add curd, pepper, ginger-garlic paste, chopped coriander, lemon juice, cream and salt.
    Step 2
    Soak almonds in water overnight. Remove the skin from almonds.Bland togather cashew nuts & almonds and add into the bowl.
    Step 3
    Mix well all the ingredients for the marinade. Wash the boneless chicken & cut them into cubes.
    Step 4
    Gently rub the marinade over the chiken pieces and marinate for 2 hours or even overnight.
    Step 5
    Fill up a oven safe glass bowl or tray with water and place it in the bottom rack.
    Step 6
    Thread the chicken pieces into skewers and place it on top of the rack of the oven as shown.(Soak the skewers for 30 mins in water to prevent burning)
    Step 7
    Preheat the Oven at 250ºC for 15 minutes with both upper & lower rod ON and cook or Bake at 250ºC for 30 minutes oruntil chicken tenders and becomes juicy
    (or the pieces look little charred.). Turn the pieces over after 20 minutes so that they cook evenly.
    Step 6
    Serve hot with lime slices & onion & enjoy!

      Microwave is not right for grilling and roasting. Better with a small oven for grills and roasts.

      The water bath should be there throughout the whole process, i.e both during preheating and baking. Water bath will help to keep the chicken pieces moist and juicy. Shweta please feel free if you have any other queries 🙏.

    Very informative video for new users of OTG. I have been searching videos on how to cook in OTG and found your channel. Just had few questions: If we have a convection OTG can we use upper and lower heating with Fan option? Also, is the water bath mandatory. I have not seen anywhere using a waterbath while grilling. Nevertheless, your videos are awesome.

      If u like to bake cake, select power on both upper and lower heating rods without CONVECTION fan, while baking tikkas and tandoori, where we need Charred effect on the top layer, turn on the CONVECTION fan.
      Water bath has been used to make the chicken pieces moist and juicy but definitely it's optional. Please feel free if you have any other queries. God bless you and your family 🙏

      Absolutely. Keep an eye on the top, specifically the last 5 to 10 mins. If u feel the doneness, means charred, turn off the oven.

      Vaheda, you can use borosilicate glassware for baking, they can withstand a very high temperature inside the oven.
      For simplicity, u can turn both upper and lower heating rods for baking most of the dishes.

      You can simply ignore the water bath part and proceed, using water bath will only help the chicken to maintain the moisture inside, without water bath the chicken pieces might be dry but will retain the same taste.

      @@science_sir actually I want to buy the same otg you used in many of your recipes...the one from prestige...I am a beginner n I don't want to invest more right now...most of your recipes are done using the prestige 19 litre otg...I think it will be a good option for me..what do you suggest? For how many days have you been using it?

      Debashree, I have 2 different models (19 PCR and 20rc). I preferred 20rc as it has CONVECTION fan inside and the price of both models are almost same. CONVECTION fan will help you to achieve the charred effect on tikkas, tandoori, rosted children very easily as compared to 19 PCR. Please feel free if you have any other queries.
