  • Noodle master Kim Hyun-Kyu has been making his bright and colorful Grand noodles by hand for over 40 years. At his shop, he and his family make black, yellow, blue, white, and red noodles in accordance with Obang - or the five cardinal colors in Korean culture - by mixing wheat flour with ingredients like garlic chives, beets, rice, pumpkin, and more.       @@md-sw6vm Because they sharpening their skills for so long it become a muscle memory. They knew which are the best ingredients because they tried all kind of ingredients and decided "this are the best ones"

      As someone who is not familiar with Korean culture, I am so grateful to Eater for this intimate view into a world I know so little about; a world rich with culture, history, beauty, and an amazing people.       Not only that, he shows pride and sincerity in what he's doing. Got to respect that, have to respect all these masters of different crafts. When you see the amount of work and effort that they put into it, one should not complain about the price because we ourselves do not have those skills nor patience to commit and do it.

    I like how he points out that they taste much different when force-dried. Makes it clear why he chooses the longer way.

      From my current understanding of the process, By force drying it, you leave larger pockets of air where the water once filled, the sudden change in heat offer a short period of time may also change the formations of gluten or even break them, this would lead to an ultimately soggier, or crumbly texture after boiling, as water comes in to fill those voids as it is being cooked. the cold dry process allows the water still in the noodles to slowly evaporate which allows for the proteins to slowly settle and contract, leading to smaller voids which water can fill, this will lead to the noodles being much firmer and gives it elasticity as the proteins are not damaged by extreme changes in heat as they were drying..

    The thing I love the most is how super country Korean he is. He is the heart and soul of what you think your "country uncle" is like when you visit family back in Korea. Also that moment where he points out how all Koreans have a high sodium intake (cry face). #saltaddict

      Step one1. Make garlic chive noodles to get rid of sodium in the body.
      Step 2. Add a mountain of salt into the mix.

    As a young food scientist, and a future distiller, I hope to have this much passion and experience when I reach his age. You can tell, he is a true master of noodles and how they are created from the ingredients to the bowl. What a pleasure to watch

    Facts that you KNOW:
    1) These noodles are so delicious because of the 40 years it took to perfect the taste
    2) These noodles are perfectly portioned and cut so that you get the best texture and mouth feel
    3) There is love and passion infused into these noodles which supplement the recipe
    4) This guy lives a wonderful and happy life as reflected by his genuine smile and positive energy
    5) Focus on one thing and do it exceptionally well and you can achieve Master Level like this guy

      Because the salt activates the gluten. I think ar the point the salt is busy doing its job with the gluten perhaps it wont affect the body's sodium

    After crushing the garlic chives..the concentrated liquid after squeezing..store in a freeze and apply everyday on the scalp..works wonder for hair lost..though its smelly..new hair grows..apply and leave overnight n wash with plain water next morning.. chives is everyday kitchen item in Manipur, India
