I really like the simplicity of this recipe and the final result looks wonderful! This sounds great! My regular no-knead recipe calls for much longer rise times, and I love that this could be started in the morning and baked later that day.
So I know that to get the best results with bread, you need a steamy environment (hence the lid on the pot) to get a good rise and crust. I've never personally tried to bake it on a sheet pan. I'm sure it would still taste great, but it may be a little flatter/spread out. I did find this great article on other ways you can bake the bread using 2 loaf pans and other methods.
