Thank you for suggesting cutting the breasts like that! I thought my probe was off because breasts kept getting dry if I brought them to temp, even if I sliced them in half across the plane. Tried the thirds cut like this tonight and they came out perfect.
By cooking it that hot, don't you get very little smoke flavour from the pellet smoker? And if you're getting very little smoke from it, why not just use a gas grill?
I find I still get some wood fired flavor, enough that it makes sense to use the Traeger versus the grill. While I may not get a lot of smoke, I'm still getting wood flavors. Chef Jason
Know your cooker, one thing targets are not capable of is grilling it’s a wood fueled convection oven and because of the fan it burns very clean and has minimal smoke flavor. Many other options on the market that are much more versatile just take more skill.
That’s very true but This allows for the people who don’t have a gas grill and don’t want to wait to let it smoke longer. That’s my case at least. The medallion style with Costco sized chicken breasts is tricky. That cutting style helped a lot. Thanks for posting
Timmy B these new Traegers deliver a very solid blue smoke, they are super efficient and while you may not see them billowing smoke, the flavor should say otherwise. Are you still tasting a good smoke flavor? Chef J

I cook chicken breasts all the time I have never had to mascara the breasts like that just put your probe in so the tip of the probe is as close the the center of the thickest piece when cook at 350 till internal temp is close check smaller breasts with instant thermometer.
I bought the timberline 850 a little over a year ago I’ve had had nothing but problems with the Wi-Fi capabilities on this it has been nothing but grief in January they updated their system supposedly to fix it it appears that it had broke my system completely as far as the computer component which I cannot even now use the smoker at all and I’ve recently just been told that the last three weeks I’ve been waiting for the part to get here I will now be waiting till May for it to get here. Do not buy a Traeger smoker!!! He’s usually sells high-quality stuff I’m sure they don’t realize how crappy the Traeger is
