= Taiwanese Braised Pork Sauce =
【Ingredients】
Pork belly (with the rind) 600 grams
Minced pork shoulder 500 grams
Pork rind 200 grams
Chopped garlic 30 grams
Shallots 300 grams
Small gherkin cucumbers 100 grams
【Seasoning】
Soy sauce 180cc
Five-spice powder 1 teaspoon
Sugar 3 tablespoons
Shaoxing rice wine 100cc
Boiled meat broth 1400cc
【Steps】
1. Slice up the shallots.
2. Put 500cc of salad oil into a wok, add in the shallots and fry them until they are golden brown then remove and let drain.
3. Fill a pot with water (about 1500cc,) after bringing to a boil put in the pork belly and pork rinds, cook for 25 minutes. Afterwards take them out and rinse them off.
4. Cut the pork belly and rind into small cubes and set aside.
5. Pour a little oil into a heated wok, add the chopped garlic and stir-fry, then add the ground shoulder meat and stir-fry until it becomes white and loose, then add the pork belly and saute while mixing it in well.
6. Then add the Shaoxing rice wine, soy sauce, fine sugar into the wok and stir it well. Pour in the boiled broth, shallots, crisp pork rinds, and five-spice powder. Let simmer for 20 minutes until the broth thickens.
7. Pour the minced pork over a bowl of rice and top off with gherkin cucumber and it's done.

= Pickled cucumbers =
【Ingredients】
2 small gherkin cucumbers (about 250 grams)
Salt 1/2 tsp
White vinegar 2 tbsp
Finely granulated sugar 2 tbsp
【Steps】
1. Wash and slice the gherkin cucumbers, add salt and mix well to cure.
2. After about 5 minutes squeeze them dry.
3. Add the vinegar and sugar, mix well, let cure for 5 minutes then serve.
