Oh, sweet friend this is too kind! Let me be very truthful. Have you heard of “imposter syndrome”? It’s when you don’t deserve “in the room” and I started to have those thought because I’d be the only one that DIDN’T have land or a homestead of any kind. Plus, I do what I do because I know actual homesteading is true work, day in and out. But truly, I cannot thank Amy and the HOA team enough foe taking a chance to show someone at the beginning of their journey. More than half the folks I spoke too at the conference are in my same boat. I lead a very regular life, and so this was such a new experience for me. Your words are just too generous and I have taken them to heart!
A tip from a keto cook: roast radishes as a potato substitute. The little red radishes halved and roasted on the bottom of a sheet pan with fresh chopped onion and garlic and a little celery and a judicious amount of carrot underneath a spatchcocked chicken is delicious. Large Daikon radishes cut and substituted in stews is wonderful as well. I also finely mince radishes (of either variety) to bulk up chilli and casseroles. Love your channel, Cassandra. I have a house that is older than the town i live in. So naturally, the town grew, and I have small land space. Between you, acre homestead, and epic gardening, my husband and I have built a decent garden. 6 metal above ground beds, 6 green stalks my neighbors are jealous. But I could never gotten this far without help.

Hi Sharon! I have been encouraging them to “come back home” for at least a decade! Between the frequency of the trips they make up here, and my moms side and I living here, and the fact that they enjoy this region as much as I do, I was surprised it’s taken this long 😜It’s gonna take a lot of moving parts to see the best fit in terms of location but hearing them SAY it was the biggest blessing. Speaking rattled my nerves but it was worth getting to talk to so many great folks afterwards.
I have always felt that feeling of love and respect for any animal you butcher is something you absolutely need to keep. The appreciation for their sacrifice of life to feed us keeps us as good Shepards.
Whenever I talk about you to family of friends I always say, “My friend Cassandra from RUclips.” I think you are absolutely adorable! We would definitely be friends. We would talk and laugh for hours and hours! 🤗
Honey, we ARE friends! That’s exactly what I felt like at the HOA conference because I didn’t have to preface my statements with, “ I know this is weird, but…” and we could just geek out over all things food and preservation. Another great way to prepare brussel sprouts is to slice sprouts in half and fry in bacon fat with a bit of salt and pepper until tender.

When I lived in Wisconsin, we had some friends who raised chickens for meat. The closest I got to seeing this was she brought in a butcher to harvest the birds. You are amazing! I'm not so sure I'd be able to do that.

Growing up with parents that hunted rabbits, quails and deer and fishing in which they skinned every thing they obtain. I had no expectations on how I would be received and honestly, I wrestled with doubt speaking at a conference when I don’t have property or animals and would be around hundreds of ills that did. I’m so glad I attended because there are actually more folks am that either don’t or who are in the beginning stages of their homestead journey that attend these conference than those that already “have it all together”. Hello friend! Your neck of the woods is stunning! I was born and raised in Hagerstown but we never ventured that far west (my moms side is on the Eastern shore side). It won’t be our last! Thank you for commenting about the quail. Sometimes I’ll get remarks about not including those scenes, but I disagree (for the reasons you mentioned). It’s only been the last few decades that we’ve gotten amnesia about how food (especially our proteins) was produced for thousands of years. The birds were humanely raised and cared for and when it came to their purpose we wasted nothing. We just finished up the quail bone and veg broth! Thank you, friend!

My words are a truth. I will tell you why I sent this off to my granddaughter. She has 4 small boys. She and her husband just bought a house with a nice big yard. In a suburb. She's very good about feeding her boys healthy food. I want to encourage her to find economical, healthy ways to feed the boys and save money doing it. You have such a can do attitude. It's great encouragement for my granddaughter. I wanted her to find ways to feed her family, without a lot of land. You cover it all. I love watching your channel myself and I was a farm girl, as a child. We can all learn something new. I did from you. That's what a good channel does! You have a great channel. 💖
