The chimney sensor will target the temperature, however if you set it too low you won't get the output and if you set it too high it will overshoot once the water temperature is close to 180F You need to stop adding wood once the water temps are near 180 or it will start to smolder and smoke.
If you can put more chimney height the better up to a point without the draft it will burn dirty. I would say you could put a draft gauge on it and run it at .1" W.C without issues so about 30 ft or so. If you cant then use a long chimney exhaust fan from gemmi market.
Do you have to let the fire go out before you can clean out any soot, scrape walls of TOP compartment?
With 200K btu you will need a max flow of 16 gpm with a 25 delta T this comes to 1.5" max and 1.25" copper min to maintain 2-4 fp/s water flow rate. You wont always be at 200 K so about 12-13 gpm should be your target. with constant pressure. You will want to size your expansion tank to 4% total system water volume. With a 30 psi pressure relief at the boiler you would not want to exxceed 25 psi at all conditions. However you will need about 14-15 psi in the system to prevent pump cavitation min at 180F-190F
Burn for 1st 30 min at -450F MAX thne 380-400 constant is a good clean burn until you storage come up to temps.
you will need a min 15 ft chimney and i suggest a chimney fan as each time you open the door to load you will get a puff of smoke. As its an updraft design. You must. The lower flap sometimes falls down so an idea would be to make a bolt system to bolt it. Start the fire with the burn door open and blower off then around 300 f exh close the door. You will need min 400 gal storage or more to make to work best.
