Thank you for sharing this. Just wondering what is your room temperature? I live in tropical country btw. I used to make some buttercream but not italian meringue and it melted! It was a fail.
It's pretty cool and not super hot. I would say around 20 degrees Celsius :). You can try an American which is a bit more stable and use some shortening as well.
You wont be able to keep food in the house , i only had one teenager in the house. And we couldnt keep food ,of no kind in the house. Hes 21 now . And i miss those days
