- This week on "Genius Recipes," Kristen's joined by chili cook-off grand champion Jenn de la Vega. They're making a genius chili recipe that has layers of complex flavor, a refined texture, punchy spice, and, of course, all the homespun comforts of a traditional bowl of chili. INGREDIENTS
1 pound (450 g) dry red beans
1 dried ancho chile
1 pound (0.5 kg) ground beef
2 tablespoons (30 ml) heavy cream
Olive oil
1 large yellow onion, chopped
1 clove garlic, grated
1/8 cup (15 g) cocoa powder
1/2 tablespoon (5 g) coriander seeds, toasted and crushed
1 tablespoon (10 g) masa harina (see Note)
Salt
1 bay leaf
1 smoked ham hock (see Note)
4 plum tomatoes, chopped (feel free to use canned whole peeled, chopped)
2 small Jamaica or Scotch Bonnet peppers, chopped (see Note)
1/2 teaspoon ground cumin
1 quart (950 ml) beef broth
1/4 cup (60 ml) plain yogurt
1 bar dark chocolate

You said it, it's bolognese, or the meatloaf trick, where you mix milk and bread into a paste/slurry to mix with the meat as a tenderizer.... I like to mix meat cuts in chili, so ground beef with chunks of shoulder or chuck and shreds from braised beef added later, I want to try this tenderizing trick on the chuck/shoulder chunks !

Can you do this with chuck stew meat? And is the recipe adaptable for the instant pot?
I'm sure you can but you're taking away from the important ground meat with cream part. For instant pot you'll want to cook it for the amount of time it takes to cook fresh beans. Then set on simmer to reduce the liquid if it's still too much.
Mexican cuisine to the rescue!
Vinegar? Won't that work too.. for those who don't mix meat beef and milk.. cocoa is the condiment in the southern hemisphere

They had this whole spiel about adding spices in two stages, but then they didn't have a second stage for any spices.
Ah, two women making bean soup! She talks about all of the tricks she saw at chili competitions and uses none. You wouldn't even qualify with this. You should of went to culinary school lol. No wonder no one ate the chili you made. Sorry, but this is not it.
