Can't add water where I live or it will turn to soup. I'm in 90° weather literally every day here in the Caribbean. We have to work in really cold ac to get the perfect buttercream and the fridge is our best friend.

Yes. YES!!! This butter to sugar ratio is so good. It tastes amazing and sweet, just the way I like it.
I've tried other buttercream recipes where the ratio is more butter than sugar, and no offense to them but it's absolutely disgusting. It tastes like very LIGHTLY sweetened butter. Not like frosting at all.

Yes, you can! Keep it in the fridge and take it out the night before you’re going to use it- then be sure to re mix it before frosting your cake, icing your cupcakes, etc.

Substitute the amount of butter with shortening. It's still going to melt but will hold better than all buttercream frosting.

Would this be sufficient buttercream to frost a cake and decorate? Or would I have to double the recipe?

    • @cakelegend
