AZERBAIJANIAN KATA WITH FLOUR FILLING

The output is 32-34 pieces
📌For the test:
Thick kefir / katyk / yogurt / sour cream - 250 g
Soda 1 tsp
Flour 5 stack. 200 g
Butter 250 g
Vanillin 1 pack
Salt pinch
Eggs 2 pcs in the dough, 1 egg divided into protein and yolk (yolk for lubrication, protein for fastening rolls)
Add a little oil to the yolk
📌For the filling:
Flour 1 cup 200 g
Butter 100 g
Sugar 1.5 cups
Vanillin 1 pack
Add soda to room temperature kefir and mix. Add salt and vanilla to the flour and grate the butter. Grind into crumbs. Add kefir, eggs and gradually sifted flour in parts. Knead a smooth elastic dough and send it to the refrigerator for 3 hours.
For the filling, mix sugar, vanilla, butter and flour, grind into crumbs.
We form a square layer from the dough, grease one edge with protein, add the filling evenly and twist it into a roll. Lubricate with yolk. Cut into pieces with a curly knife.
We send it to a baking sheet and bake at 160-170 ° C for 20-25 minutes.
