The person definitely has sharp skills & techniques, he thought out of the box concept. When the day comes he grew his business, just wondering if he gets a cutting boards in few minutes he will cut them all. Very soon he will have his own shop. God bless him💞

The side which is used in utensil are front side, be it spoon, plate etc. But if it's flip upside down then its backside. The person knows to use the front side also very well seeing his expertise he mastered with the back of the knife too.

This guy at least has better hygiene then the most I've ever seen on India Street food, even though he's cutting the Ingredient without chopping board at least he used tool for mixing them. And he's not in the worst possible beach, I know there's a beach that double as toilet there.
I still am unsure how are gloves more hygienic than washed hands. Even scientific papers have proven that for food handling, gloves are worse off as people touch multiple things with gloves (not just food) while working in a kitchen. People can also wear gloves and sneeze but not change gloves. Hands if washed properly are much better.
Standing 10 hours keeping so tidy and neat! Like for this guy! Hope he gets the infrastructure for his work in 2021

It's not the back of the knife. It looks the way it does because it's been sharpened so many times the cutting edge is now concave.
