Funny, just rebuilt my early 80's 2-switch EP and while I ordered a ton of upgrades, silicone gaskets, bong isolator, stainless steel pins and a tank pressure gauge (which turned out really useful) I never really considered adding a brew pressure gauge. The Pavoni is a cracking little machine, personally I prefer the older versions but the goal is to get a feeling for it instead of relying on probes, sensors and dials. IMHO.
