How to use AI to extract data from emails

This tutorial video explains how to use AI to extract data from invoice emails through a workflow in Relay.app. In this example we are using OpenAI's GPT-3.5, however any other model such as GPT-4o mini or a model from other providers such as Claude or Gemini would work as well.
