Made this - did the thing at the end with putting them in the oven to make pockets. Filled with a veg and mince mix. Family VERY IMPRESSED!! Thanks so much. Would give it 1000 likes if I could.
if you are using sour dough starter you don't need yogurt, just add milk. traditional recipe uses only yogurt and is set to rest for 2-3 hours to give it that sour taste.
Yes, sourdough bread can be refrigerated anyway from a few hours up to 36 hours. The slow cold ferment develops a better flavor. It also develops the tanginess of sourdough. So, how long you leave it in the fridge depends of how complex you like the flavor.

"If you don't put salt in it, it'll just taste shit, like most things"
Never a truer word spoken

Thank you! If I decide to leave to prove overnight do I fridge it or not?
Yes, you can, it just slows the process down but works great :-)
This is more like pita bread.
Can sourdough be refrigerated overnight for bulk rise ?
Yes, it just slows the process down a little.
