There is a specific banana that is very sweet, mash it and mix with corn flour then steam and eat. its very filling. We eat them in western Kenya and Uganda. When we work together and eat together. We protect each other as a community. We don't compete.

The corn bread is also made in Western Kenya by my Luhya community.we call it 'Ebitata',to make it in nairobi where i cannot find banana leaves i use aluminium foil,wraps,then use a steam bath to cook,it shouldnt come in contact with water...just steam..15 mins .serve hot!

The Banana bread recipe must be familiar to most East and West African, probably showing up in some variation somewhere around them. I know that in Nigeria and Togo, there is a variation in which the banana is replaced with over-ripe plantains going really soft. In that version, the mix is either steamed like a pudding or it can also be deep fried! I love the deep fry version.
