Tell you Danny, you need to get yourself down to brighton! A lovely Italian restaurant called Colosseo! Has some amazing food, authentic Italian and the service is the absolute greatest! So friendly and so worth the journey down!
I think you’ll be interested to know a bit about the dumplings 🥟! They’re nicknamed ‘Potstickers’ due to their origin. Centuries ago, the cook was preparing the usual boiled or steamed dumplings for a Chinese emperor (or some high up member of the royal family). On one occasion he stepped away from the steaming dumplings & the pot boiled dry causing the dumpling bottoms to fry on the hot surface. He took a chance & served them to the Emperor-who LOVED the soft chewy side & the fried crispy other side. They’re traditionally cooked like this when people ask for Potstickers 🥟. Now you can buy frozen dumplings and drop them in an inch or so of boiling water with a couple spoonfuls of oil. The boiling water cooks them through, & once it’s evaporated the oil sits on the bottom to finish off by frying for a couple minutes. Thought you’d be interested.

the charing on the bottom of the gyoza are actually japanese way of cooking, which I personally prefer that way. Again in Liverpool, do you advertise where your going? be great to meet you, helped me through covid with such lovely content, and most importantly your personality despite your own story you are such a trooper and nice bloke. hopefully one day ill get to meet ya and give you a handshake
Not just Japanese, polish too have dumplings like that, you can buy them in polish shops, and a trick is to pour a tiny little bit of coke in the frying pan to finish them off in the end, gives them that sticky darker bottom!

Visited here over Christmas. Excellent food. Top Tip: Take a plastic takeaway box with you for leftovers. The cardboard one supplied fell apart and food was wasted.
