After throwing more money than I ever have thrown at a butcher, I lived in fear that I would destroy this gorgeous cut of meat. I need not have feared. Natasha’s recipe was true gold, as always. I used your recipe as a guide for a ribeye roast I made yesterday. I used garlic (ground in a Puerto Rican style wood mortar), ground coriander, pink salt, black pepper, olive oil. It was a 7lb piece so I had it at 325F for almost 2 hours, after the 20 mins at 500F, in roast mode (gas oven). It came out medium rare, but it was perfect !! Thank you Natasha. This is my first time cooking one of these, and it won't be my last time.
Thank you Natasha for the great recipe. I made it for Christmas dinner this year. I had 8lb prime rib and slightly modified the preparation steps - i mixed onion powder, smoked paprika, salt and pepper and rubbed all over and let it rest for 4hr before cooking. Kept it in the oven at 500 degrees for 15 min as you suggested and then took it out when the thermometer was at 130. After resting for 45min, it turned out to be a perfect medium. Thank you!!!
True story, I once had a neighbor give me a prime rib roast, it sat in my freezer for probably 3 years because I was too intimidated to cook something so luxurious as prime rib. With Natasha by our side, that never needs to happen to anyone ever again! 5:28 "...you can't go wrong unless you over bake it..." that is one of my biggest pet peeves about cooking meat, people who will ruin it by over cooking. Thanks for pointing that out. Also at 0:58 you mentioned to let the roast come to room temperature on the counter for about 3 hours, absolutely great advice! I even let steak come to room temperature for about an hour. So many people seem to think that a steak or roast is going to contract Corona if it sits on the counter for more than 10 minutes, and that's just absurd! Thank you, thank you, thank you Natasha! I am no longer intimidated to cook this dish!

We literally just tried this recipe tonite. (Christmas day). We added cut potatoes, carrots and onion after the 15 min at 500 degrees. I added about a cup of water to the roaster pan and the veggies. The broth made an excellent gravy. The one thing that I did a tad different was that I made up the Garlic rub early so to allow the herbs, salt and garlic to blend together. This makes a difference when doing a "Wet Rub" like this one. I've used "Wet Rubs" or Marinades and I've found that when making them fresh, that you want to allow the ingredients to blend for several hours to overnight if possible before applying it to the meat. We normally have Ham on Christmas day. But this year we found a fantastic deal on a Ribeye Roast (that the butcher pre-cut the bone like in your video.). So we decided to have the Beef Roast for Christmas dinner instead of the Ham. I am hoping that next year there will be a great deal on the Ribeye Roasts again!! I like having a Beef Roast for Christmas dinner!

It came out just like the picture! Juicy and tender mine did have to cook an extra hour was still cold at 3 hours sitting out but otherwise it was great! My first time and my crowd was shocked. I was glad I didn't ruin it! Thank you Natasha! Will be using this all the time for my rib roasts!
Christmas Eve is strictly fish, every year something different, dried cod that has to be soaked a week ahead of time, I make a simple salad with that. Chioppino and greens we raise in our garden and freeze for frying with evo, garlic crushed hot pepper salt. Sometimes shrimp, it varies on Christmas Eve day the Italian tradition early morning, I make 5 lbs of flour eggs, milk yeast, salt and golden raisins like a very soft dough. Let. rise and then fry and add sugar when removed from oil. Christmas Day, Italian pasta with meatballs, and prime rib.

I don't like Prime Rib, I like a Prime Rib Bone-in Steak! My husband loves Prime Rib and the local grocery store had them on sale! I bought one and asked the butcher how does one cook this. She looked at me and said "in the oven!". OK When I got home and groceries were put up I got on FaceBook just to check things out. All of a sudden there was this cute young girl telling me HOW TO. OMG I have never had a Prime Rib to taste like this. My husband was so thrilled. Thank You. I've cook another one since.

I bought prime rib roast when it was on sale but didn't know how to cook it and put it in the freezer. I am a big fan of you why didn't I search when I bought it!! It was frozen but hopefully it will turn out okay. Cooking tonight!
Made this last night with a small 2 bone roast. Delish! Only think to change is the 14-16 mins per pound....stick with temp probe and match the temp to your desired doneness? (Redness)
My first roast I've ever made and your recipe was a total hit. It was moist and tender and so flavourful. I added extra garlic and rosemary by making several slits in the roast. This one is a keeper.

Our wonderful Publix stores here in the south ran these beauties on sale before Christmas for $5.99 lb...I wish I'd had more freezer space!
I've done prime rib every which way but loose now, IMO baking @ 200F for 4-6 hours until it reaches 120F internal, rest for 30-60 minutes, then finish in a 450 degree oven for 10-15 minutes gives the best result I've ever seen. Use convection roast to finish if you have that setting.

I would put some of that seasoning mix in that opening made between the bone and the meat before I tied the meat. Also, you got to have gravy with that meal. Good excuse for deglazeing that pan you cooked your roast in.
Good morning I do it the same way except for I go 12 minutes because I prefer rare in the middle medium a little ways away and then the end pieces that are done for those people but it looks good I use chives with garlic mixture
Excellent video. Prime rib is incredibly easy to make, and I've made it several different ways. I do favor a garlic crust like this, but it all depends on my mood. I definitely want to try those mashed potatoes.

so i made an eye of round deli style , I covered in alot of salt, black pepper and a whole clove of garlic I ran through my garlic press twice, covered the roast with all of the put in the fridge for 2 to 3 days, cook in vintage westing house roaster, at 225. flipping it 1/2 way through. most likely I will use this method on thankx giving on the standing rib except for the flipping.what do you think?

The best way to get juicy and delicious prime ribs is to wet marinade the meat for a full 24 hours. Before seasoning use a long cooking fork and puncture the meat all over. That way the seasoning can be soaked into the puncture holes.

Good morning I do it the same way except for I go 12 minutes because I prefer rare in the middle medium a little ways away and then the end pieces that are done for those people but it looks good I use chives with garlic mixture

Excellent video. Prime rib is incredibly easy to make, and I've made it several different ways. I do favor a garlic crust like this, but it all depends on my mood. I definitely want to try those mashed potatoes.

so i made an eye of round deli style , I covered in alot of salt, black pepper and a whole clove of garlic I ran through my garlic press twice, covered the roast with all of the put in the fridge for 2 to 3 days, cook in vintage westing house roaster, at 225. flipping it 1/2 way through. most likely I will use this method on thankx giving on the standing rib except for the flipping.what do you think?

The best way to get juicy and delicious prime ribs is to wet marinade the meat for a full 24 hours. Before seasoning use a long cooking fork and puncture the meat all over. That way the seasoning can be soaked into the puncture holes.
